Vegan and Vegetarian Dining in Duluth
The A. G. Thomson House Bed and Breakfast is situated in the Historic Congdon Mansion District, just minutes from downtown Duluth, Canal Park, the Glensheen Mansion, and a tantalizing variety of restaurants and shops. Each morning, you’ll start your day off right with our gourmet breakfasts, which are anything but ordinary. Our menus change frequently, often highlighting local and seasonal goods where possible. We are proud to only use Local Free Range Eggs in all of our dishes, and we make every effort to source locally grown and environmentally responsible products when available!
Beyond that, we are continually searching for new, delicious, and unique recipes, and are happy to cater to your dietary restrictions whenever possible. Here’s one of our recipes for Vegan Scones that has proven popular at the Inn:
Vegan Orange Chocolate Chip Scones
1 1⁄2 c flour
1⁄4 tsp salt
2/3 c. sugar (raw or refined)
1 tsp baking powder
1/3 c. earth balance slightly softened
1⁄2 c. soy milk
1⁄4 tsp. Vanilla
Zest of one orange
1 c. vegan chocolate chips
Preheat oven to 375 degrees.
Mix the earth balance, flour, salt, baking powder, and sugar together; add the soy milk and the rest of the ingredients. Work into a dough. Add slightly more flour if very sticky. Placed on a greased baking sheet and press into a circle. Score into 8 wedges. Sprinkle with raw sugar. Bake for approximately 15 minutes. Do not over bake.
