A Vegan Recipe from the A.G. Thomson House Bed and Breakfast

Vegan and Vegetarian Breakfast at our Duluth Bed and BreakfastOur breakfasts are scrumptious, and made from scratch in our kitchen daily, using the freshest, locally-sourced ingredients whenever possible. Our menu varies frequently and with the season, and will be served each morning in our sun-drenched dining room. You also have the option to have it delivered to your suite for a small fee.  We also offer our special blend of locally roasted, fair trade Alakef Coffee, along with an assortment of fine teas, hot chocolate, and apple cider. We’re always in search of new and fresh recipes to serve our guests, and that includes vegan recipes like the one for our Vegan Pumpkin Muffins. Find the recipe for these delicious treats below:

Vegan Pumpkin Muffins

Ingredients:

  • ¼ c. margarine (I use earth balance)
  • 1 c. brown sugar
  • ½ c. applesauce
  • 2 c. pureed pumpkin
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 2 ½ c. flour
  • 2 tsp baking soda
  • 1 c. vegan chocolate chips

Directions

  • Preheat oven to 350 degrees and grease muffin tins.
  • Cream the margarine and sugar together. Add applesauce, pumpkin, and
    spices. Mix well and add flour and baking soda. Fold in the vegan chocolate
    chips.
  • Fill the muffin tins and bake for 20 – 25 minutes. These muffins don’t rise
    much, so fill the tins until at ¾ full.

Makes 12 muffins.
